The city of Austin has long been known as a mecca for healthy living. We at El Lago also believe in healthy life style. We strive to use natural ingredients in all our products. The corn that we use for both the tortillas and chips are non-GMO (Genetically Modified Organisms) certified. Our masa contains only lime, corn and water. That's it!

When we fry our chips we only use 100% canola oil. Canola oil was developed through conventional plant breeding from rapeseed, an oilseed plant already used in ancient civilization. Turnip, rutabaga, cabbage, brussels sprouts, mustard and many other vegetables are related to the two canola varieties commonly grown. Canola oil was bred to reduce the amount of acid and increase Omega 3 (Healthy) fats. Canola is thought to be the healthy alternative to other oils.

El Lago has also incorporated probiotics into our tortillas. Probiotics are the healthy bacteria in our digestive system. Yogurts with probiotics have been used for decades to help with digestion. El Lago has found a way to add a healthy dose of probiotic cultures to our tortillas. The probiotics can withstand the heat of the kitchen and still perform. These tortillas are made two ways: one is unbleached flour for the traditionalist and the second is whole wheat multigrain for the health conscious.

El Lago is experimenting with new tortillas all the time. We have produced a gluten free multigrain tortilla that can roll with the best of them. This tortilla is flexible, is appealing to the eye, and most importantly taste great! We know that there is a certain portion of the public that needs a gluten free diet and this tortilla is the best addition to that diet.

Another tortilla we will be introducing is a glycemic tortilla. All of our initial tests show this tortilla to be glycemic neutral with less than 4 grams of net carbohydrates in each fajita style tortilla. This tortilla is soft and flavorful and puffs up just as our regular tortillas do.

So as you can see El Lago is not just a tortilla factory pumping out tortillas and chips daily, we have an eye to the future and want to promote healthy food options for the Austin and San Antonia area residents.
